Tareq Taylor at Ulkeröds Gård
For 11 and 12 October, our head chef, Jonas Blomstervall, has invited Tareq Taylor to Ekbacken Restaurant at Ulkeröds Gård. During the evening you can enjoy a six-course menu put together by Tareq. “Much of my philosophy when it comes to food has to do with taking care of what nature has chosen to give us at this very moment and finding inspiration and challenge in the different seasons. Enjoying the first warming rays of sunlight in spring and the first early vegetables, fern shoots, white dead nettle and spruce shoots. Or the first rod-caught perch together with nettles and wild garlic.
Summer, which brings fresh strawberries, elderberries and rhubarb, and autumn, with its complete abundance of ingredients, more than we can sometimes manage. And then winter, when the supply of fresh ingredients is considerably more limited.
We then have to make do with whatever we have managed to preserve during the most bountiful periods of the year. I love how the different seasons affect how food looks, tastes and is put together.
Living in sync with the seasons is a gastronomic challenge. It pays to be extra inventive. While it’s true you are limited in terms of ingredients, the possibilities are endless. It’s a matter of daring to challenge yourself.
The ebb and flow of nature means that dishes have to be varied and developed in a way they never would be were I instead to choose to disregard the seasons. Nowadays you can basically eat the same type of food every day because, of course, the grocery shops offer seasonal ingredients all year round.”
