With a taste for the wild

Game meat is both good and healthy, but is used too rarely in our kitchens. It is also leaner and more nutritious than other meat, but above all natural. With us, you can eat game without hunting - and perhaps be inspired to start eating more game meat?

At Ulkeröds Gård, we train you in the art of cooking venison in the best way so that you can eat more game every day. The meat is natural, locally produced, organic and very tasty. In addition, game contains large amounts of omega 3 and omega 6 fats. The animals live a good life and are allowed to roam freely, they have never been around antibiotics or artificial feed and have never been subjected to transport. The benefits of venison are many, but ignorance is also great.

At restaurant Ekbacken we often use meat from wild animals, other meat is mainly from animals on the farm. Meat therefore has an obvious place in our menus. With our own game handling facility, we can carefully monitor the entire process, from forest to plate.

The hunter on the farm, Oskar Johansson, has full responsibility for the animal from the forest to the kitchen. Therefore, we can also ensure the quality of our venison. Maintaining good hunting ethics is important to us, it is done out of respect for the wild but also so that the meat will maintain a high quality. A stressed animal produces poorer meat quality. Good hygiene and common sense are also very important when handling the meat. In the game handling facility, we sort and cut away a lot around the shoots. All meat is inspected. As soon as the game has fallen, we handle it with the same hygiene requirements and care as other foodstuffs.

For us, venison is a positive connection to nature, it is healthy and climate-smart. The wild animals that are shot at Ulkeröds Gård are not transported long distances, the meat is free from antibiotics, dyes and additives. It is also lean and nutritious. Out of respect for the wild, we make use of as much of the animals as possible.
